Spices
- ¼ tsp ground cumin
- ¼ tsp curry powder
- ¼ tsp cinnamon
- 4 large carrots, peeled
- 1 ripe mango, peeled
- ½ lemon, freshly juiced
- 1 yellow onion, chopped
- 1 garlic, finely chopped
- 1 tbs ginger, minced
- 1 tbs honey
- ½ tsp pepper
- ½ tsp salt
Directions
- Chop carrots and slice mango to bite size and set aside
- Prepare onions, garlic and ginger
- Mix spices in a small bowl
- Heat olive oil in a non-stick pan and sauteƩ onions until translucent (not brown)
- Add garlic, ginger and carrots to the pan. Lower the heat and close the lid for 5 minutes to soften the carrot
- Season with salt, pepper and spices. Smell the spices perfuming the kitchen
- Stir-fry for another 30 seconds and add in ripe mango pieces
- Pour in lemon juice and honey as a final touch before turning off the heat
