Carrots and Mango Salad

In the mood for more prettiness and sunshine on a plate? Try a spicy fruit salad from smoothie-inspired combination, according to Kay :) Goes well with grilled meat and Noob Cook's spicy baked potato wedges! Yummms...

  • ¼ tsp ground cumin
  • ¼ tsp curry powder
  • ¼ tsp cinnamon
  • 4 large carrots, peeled
  • 1 ripe mango, peeled
  • ½ lemon, freshly juiced
  • 1 yellow onion, chopped
  • 1 garlic, finely chopped
  • 1 tbs ginger, minced
  • 1 tbs honey
  • ½ tsp pepper
  • ½ tsp salt

  1. Chop carrots and slice mango to bite size and set aside
  2. Prepare onions, garlic and ginger
  3. Mix spices in a small bowl
  4. Heat olive oil in a non-stick pan and sauteƩ onions until translucent (not brown)
  5. Add garlic, ginger and carrots to the pan. Lower the heat and close the lid for 5 minutes to soften the carrot
  6. Season with salt, pepper and spices. Smell the spices perfuming the kitchen
  7. Stir-fry for another 30 seconds and add in ripe mango pieces
  8. Pour in lemon juice and honey as a final touch before turning off the heat
