Peachy Chicken

Happy 2011!
Keeping to the theme of a brand new year of hope and (more) summer days, this plate brims full with appetising colours and joy. Oh and scrumptious too!

The recipe for chicken cutlet came from the most uncanny place, on a bottle of Heinz® Malt Vinegar. It's the same recipe for years (if you notice) and I bet you've been wondering (one time or another) how it taste? Well...

Herb and spices
  • 1 tsp basil
  • ½ tsp ground cinnamon
  • ½ tsp ground cloves
  • ½ tsp black peppercorn, freshly grounded
  • 4 chicken fillets
  • ½ tsp salt
  • ¼ cup orange juice concentrate
  • ¼ cup malt vinegar
  • 2 tbs corn starch
  • 2 tbs water
  • 1 tbs brown sugar
  • 1 tbs olive oil
  • 1 can peaches, sliced and reserve liquid

  1. Strain peaches from the can and set the liquid aside
  2. Brown chicken fillets with olive oil in non-stick pan
  3. Add herbs and spices, salt, brown sugar, malt vinegar, orange juice and peach liquid
  4. Let simmer for 20-25 minutes or until chicken is cooked
  5. Taste test the sauce and adjust seasoning (salt and pepper) accordingly 
  6. Add sliced peaches in the pan 
  7. Stir corn starch and water in a small bowl until well mixed
  8. Pour mixture in the pan to thicken the sauce
  9. Once the sauce reaches a consistency that you prefer, turn off the heat and serve
Add a touch of green (sauteéd pea pods with butter and lemon zest; or any leafy vegetable) and red (fresh cherry tomatoes) to complete the colour palette
